一心不乱(This is in Janpanese) is a ramen that changed my views in all ramen! I used to believe that ramen is just noodle with some side dishes soaked in salty, oily pork bone broth. They are undoubtedly nice, but I won't rate it as one of the best noodle dishes. And on this day, ramen has risen to one of my favorite noodles.

For white and black ramen, there is no saltiness that tries to cover the lackluster in the taste of the broth, they are fantastic! Red tasted a bit more normal. Yellow (the one I had) was in my opinion the most ordinary. Wait, that's not as bad as you think. It tells you that it will be salty, the broth itself is seasoned with pretty much salt only, as far as I understand. This means that the rest of the things inside are bland and as long as you don't drink the soup all alone, the flavours are balanced. The side dishes inside are good, noodle springy (regret not choosing hard instead of normal), and everything is really good.

Really thought that I should have tried black and white, but well, yellow is good enough.

夜市! Trust me, it's not as impressive as you may think it is. But the food is REALLY good there!

Chicken wing wrapped in fish roe! Right... Thing is, I really didn't want to touch chicken on this trip... Since the store displayed tons of seafood, I didn't expect chicken to appear in our set. But after one bite, I sinfully admit that I gave up... It is too good.

Black pig meat, tender, juicy, fantastic.

Tempura! I need not say more.

Ah, the old lady and two guys, they are from the store. However, the other lady is a regular customer from Taiwan. She helped us to order our food (which cost us much less than we expected), treated us to sake the Japanese alcohol (much weaker than we expected, still each of us only took about a mouth full), and she offered us hospitality if we were to ever visit Taiwan. A really really nice lady! Hope she sees me adding her on Facebook. Ha!

Kumamoto, a small town in the middle of nowhere. In Japan, urbanization is almost complete. Often, it's a little hard to tell whether one's in city or rural area. The border between the two is almost indistinguishable.

Basashi. Raw horse meat, basically. The price of this makes people wonder why is having horse meat in your beef such a horrifying thing in Europe. :/ That tiny plate costs about S$25, J¥2100.

The awesome sushi with wasabi placed under the topping, as far as I know, practiced only by sushi chefs with high demands not only for themselves but for their customers too by demanding the customer to eat that specific amount of wasabi. He believes that is the right amount and no more or less should be used.


My sashimi set, tasting generally nice. Though personally, I don't think I eat raw fish often enough to tell how good or maybe bad this is.
